From the ducks neck we have kept the skin, which envelopes a delicious duck stuffing, into which we have placed a long medallion of foie gras.

Cut into slices and serve cold on a bed of mixed salad leaves. Serve either as a "gastronomic" starter, or as a main course salad - add warmed sliced gesiers (gizzards) and slices of dry cured duck breast.
