The seasoned duck legs are placed in a large pot, on a very low heat, where the fat melts and the meat slowly cooks.
It is this method that gives the fabulous flavour!
The legs are then covered with the duck fat which both preserves and keeps them tender.
Ingredients: Duck legs, duck fat salt and pepper.
For 4 people
4 duck legs slowly cooked in the traditional way in duck fat.
To serve: Open the tin and place in a bain-marie to melt the fat. Remove the legs, drain off the fat and fry gently until golden brown.
Accompany with potatoes, cepes, and green beans.
(Keep the extra duck fat in the fridge and use for cooking your potatoes and vegetables)
