We needed a big recipe to bring together all the classic flavours from the South West - the delicate confit duck meat, the robust red wine, the sweet prune and the unmistakable Armagnac.

We found the solution in our kitchens...gently simmering on the stove. : The civet of confit duck flambéed in Armagnac!

Ingredients : Confit duck 45%, red wine, carrots, prunes ,onions, garlic, Armagnac 1%, tapioca starch, salt and pepper

To prepare: slowly reheat in a saucepan over a gentle flame and serve with fresh pasta.
