The garlic cloves still in their outer skin "en chemise" delicately flavour this dish - a true celebration of south west cuisine.

Tips for preparation : open the jar and place in a bain-marie to melt the duck fat. Remove and drain any excess fat from the meat and garlic cloves, then gently fry until golden.

Serve with potatoes, roasted or fried in duck fat.
