Grattons are small pieces of meat collected after the confit have cooked in duck fat.

Ingredients : duck meat and hearts, duck fat, salt and pepper

Grattons can be eaten hot or cold. 

They are excellent served cold, spread on pieces of toast, cut in cubes, or served in a chicory leaf for aperitif snacks. 

Fried , they are very tasty spooned over a Gascon Salad, in an omlette or a quiche where they replace bacon lardons.
