In a large pot, over a low heat, the drumsticks which have been salted overnight are slowly cooked.
It is this method that gives the fabulous flavour!
The drumsticks are then covered with the duck fat which both preserves and keeps them tender.
Serves 4 people
Open the jar and place it in a pan of hot water (bain marie) to melt the fat.
Remove the drumsticks, drain and fry gently over a low heat until golden brown.
Accompany with potatoes, mushrooms and green beans.
